I love a good cup of coffee to start out the day. I want a coffee that I can count on to taste just the way I want it time after time. Brooklyn Bean Roastery performs five different quality control checks with each batch they make:

  1. Visual inspection – only the best coffee beans make the initial cut.
  2. Supervisor-monitored grinding – A little secret: if it’s too coarse, it won’t brew properly; if it’s too fine, the coffee gets bitter.
  3. Portion quality control – precisely the right amount is packed to ensure the best brew every time.
  4. Filled and sealed pods are individually hand-checked for perfection.
  5. Brewed coffee samples are consistently taken for aroma and taste testing checks (we admit, this is our favorite part of the job!)

Spumoni Cookie Recipe

As requested, my recipe for Spumoni cookies. These are similar to regular chocolate chip cookies, but made with white chocolate, dried cherries, and pistachio nuts. Mmm, I might need to make another batch!

 

Spumoni Cookies

2 1/4 cups all-purpose flour                                   1 teaspoon baking soda

1 teaspoon salt                                                            1/2 cup butter, softened

½ cup shortening                                                      3/4 cup granulated sugar

3/4 cup packed brown sugar                                    1 teaspoon vanilla extract

2 large eggs                                                                  1 cup dried cherries

1 cup pistachio nuts, shelled                                  2 cups white chocolate, chips or chopped

Preheat oven to 375F.

Combine first 3 dry ingredients in a small bowl. Mix sugars, butter, and shortening in a large bowl,  beat until creamy. Add vanilla, then eggs, one at a time and mix well each time. Gradually add in flour mixture and beat well. Stir in chocolate, cherries, and nuts. Drop by generous tablespoons onto ungreased cookie sheet.

Bake for 9-11 minutes or until golden brown. Cool for 2 minutes, then transfer to wire racks. Cool completely before storing in a sealable container. Dough or baked cookies freeze well.

I’ve been studying some information that had been passed along to me regarding having a healthy PH balance in my body. I am finding that there are numerous physical issues that can be caused simply by having an acidic balance that’s too high for the body to properly digest and assimilate nutrients before flushing them out. Acidosis, even at a slight level, can cause a plethora of unwanted reactions. A list of these is:

I was pretty concerned because tests I’ve taken have already shown that I have Osteopenia, the beginnings of Osteoporosis, as well as Osteoporosis in some areas of my body. I felt it was necessary to at least attempt to put a halt to future damage, much less attempt to create a healthy balance in my body to avoid future issues. I tested the second day at 7, which is neutral. I noticed that the foods and drinks I consume can alter the readings by quite a bit. Water really helps to bring me back into the neutral range, especially if I add a slice of lemon to it. I thought this strange, as lemon has an acid taste, but it actually helps your body lean more towards an alkaline reading.

I picked up a Pure Body Naturals Aromatherapy Top 6 Essential Sampler Oils Kit and it’s such an awesome kit I had to tell you about it! This kit consists of 6 of the most popular and most used oils; Lemongrass, Peppermint, Eucalyptus, Sweet Orange, Lavender, and Tea Tree. These oils are good for so many different applications. The oils are Therapeutic grade and will work directly on skin when combined with a carrier oil such as coconut or almond, my 2 fave carrier oils. They can be put in a spray bottle with water for a room spray or in a diffuser.

I personally love the Lemongrass oil. I had never tried Lemongrass before and it has such a clean, citrusy smell. Everyone in the house commented on the scent. I think it’s my new favorite. They only thing I missed was a dropper to get the exact amount I wanted to use, but it’s fine. I used some of the Sweet Orange when cleaning and it really seems to work well without using chemicals in my home. And when my kidlet started fussing that she was feeling like she was coming own with a cold, I gave her some Vitamin C and used the Eucalyptus oil with my coconut oil to chase the symptoms away. She felt better after that, no she never missed any school. I am curious to see which oils they will offer next!
